This is a great summer menu for a dinner party!  This menu was served as a fundraising dinner for Paradise Preschool summer 2009.

Local Raw Food Arugula Salad

Arugula Salad

2 cups tender arugula

1/2 cup Kalamata Olives, chopped
1/2 cup Fennel, shaved
2 tbsp. fresh pressed Olive Oil
1 tbsp. fresh Lemon Juice
zest of Lemon
pinch Himalayan Sea Salt
