Raw Thai Coconut Salad

For the Tofu:

1/2 cup soaked cashews
1/4 cup fresh coconut pulp
1/4 cup coconut oil (gently warm below 115 degrees to a liquid)
1/2 tsp. Himalayan or other mineral rich salt.
